I decided to cook something special since J was coming home after being gone for a week on business. Of course the first thing I did was take to Pinterest, where I found this delicious White Chicken Lasagna Roll Up recipe from Tiffany at LeCremeDeLaCrumb. You can find the original recipe, instructions, and link to her page here. She has all kinds of entrees, desserts, breakfasts, snacks, and sauces so make sure to check her out for more great stuff! Not only are her recipes great so are her pictures! I am using her picture of the rollups because mine just did not do this recipe justice.
Ingredients:
8 lasagna noodles
2 cups alfredo sauce
2 chicken breasts (cooked and shredded)
8 oz softened cream cheese
1 c shredded mozzarella
1 c shredded parmesan
2 tsp garlic powder
2 tsp italian seasoning
salt and pepper to taste

I did change up the recipe a little bit. I hate having too much to do at one time so I cooked and shredded my chicken yesterday morning. After it cooled, I put it in a tupperware container with alfredo sauce and let it soak in the fridge till I got home from work last night. Then all I had to do was cook the noodles and put it all together. While the noodles were cooking I started mixing my chicken with the other ingredients (everything except a 1/2 cup of shredded cheese and alfredo sauce), and this is where I began to veer off the recipe. Instead of parmesan and mozzarella, I chose the sixcheeseitalian shredded cheese from Publix which includes; mozzarella, provolone, parmesan, asiago, fontina, and romano... basically heaven. Along with the cream cheese I added ricotta, because what is lasagna without the ricotta! I used a 1 1/2 cups for the shredded cheese and used about 6 oz of ricotta and 3 oz of cream cheese. From there it was back to the recipe, about 1/4 cup of mixture spread onto each noodle and rolled tightly, 1 cup alfredo in the bottom of greased dish, add rollups, remaining alfredo on top of the rolls and the leftover cheese sprinkled on top of that. Put it in the oven at 375 for about 15 minutes or until cheese is melty and it is ready to go! J and I were really happy about this meal, we did everything except lick our plates clean!
